Princess Cruises Classic Restaurant, Sabatini’s Italian Trattoria is Getting a Fresh New Look
Princess Cruises’ Sabatini’s Italian Trattoria restaurant is poised for an extravagant upgrade. The fleetwide enhancements promise to heighten the traditional culinary experience with a modern flair. The facelift for Princess Cruise Ship’s classic restaurant will continue to honor the line’s Italian heritage while tantalizing guest with new, globally inspired flavors. Presentation of the enhanced Princess cruise dining menu will also be showcased in a re-envisioned décor that simultaneously captures the rustic touches reminiscent of an opulent Italian brasserie with an innovative contemporary ambience.
The relaunch of the elevated Sabatini on April 7th, 2017 celebrates 20 years of exquisite service on the Grand Princess. Already recognized as a one of the “Finest Specialty Restaurants at Sea,” the initial unveiling of the Sabatini’s Italian Trattoria restaurants began on Caribbean Princess and Grand Princess of the Princess Cruises fleet. Others are slated to be launched across the fleet in the coming months.
Since its 1998 debut on the Princess Cruises fleet, guests have been wowed by the palate pleasing entrée’s and service that has become the benchmark at Sabatini’s Italian Trattoria restaurants. The elevated cuisine will feature among others, handmade pasta dishes antipasti from award winning Chef Auriana as well as authentic recipes curated from Italian executive chefs across the Princess fleet.

The new dining menu will maintain the integrity of the exquisite Sabatini culinary style distinguished by Northern Italian aromas and flavors. - Mint speckled tortellini with roasted lamb, pecorino crosta nera, cacio e pepe sauce and broccoli rabe
- Aromatic Marjoram infused picagge with artichoke pesto, white prawns, clams and Ligurian olive oil
- Vialone nano rice risotto with beets dolce latte, gorgonzola and pistachios
- Nebbiolo-braised beef cheek with Pappardelle and celeriac
- Torchietti with foraged mushrooms and rosemary oil
- Roman inspired seafood al Cartoccio with grouper, shrimp, black mussels, scallops, potato and artichoke
- Savory Porchetta Toscana with aromatic fennel seeds, potatoes, spinach and roasted tomato
The signature style of Chef Auriana relies on incorporating old world grains like buckwheat, durum and other non-traditional ingredients like mint and marjoram that highlight Chef Auriana’s evolutionary bon vivant approach.
According to Mario Siebaldi, Princess Cruises senior vice president of guest operations, the reimagined concepts for the Sabatini’s Italian Trattoria restaurants on the Princess Cruise Ship will excite both new and returning guests alike. “Sabatini’s has always been a Princess guest favorite and this new collaboration with Chef Auriana elevates our Italian heritage by continuing our fresh approach to authentic Italian dining that will now be featured in a beautifully transformed elegant dining ambiance.” he said.
