For example, search out and try the fritters and shellfish, snails, shrimp, crab and more. Such favorites as “pescado frito con patacones,” which is delicious served with fried sole, green plantains with a fresh salad and white rice may just become a favorite. Yes, a very Caribbean flare that is a must-do.

Jot down another local favorite: Carimanola. Based on yucca and stuffed with ground beef, costeno cheese, chicken or other stuffing. This can be served with either tomato or a mayonnaise dressing.
