For example, search out and try the fritters and shellfish, snails, shrimp, crab and more. Such favorites as “pescado frito con patacones,” which is delicious served with fried sole, green plantains with a fresh salad and white rice may just become a favorite. Yes, a very Caribbean flare that is a must-do.
Jot down another local favorite: Carimanola. Based on yucca and stuffed with ground beef, costeno cheese, chicken or other stuffing. This can be served with either tomato or a mayonnaise dressing.
Of course if you’re not sure then perhaps each person in your dining party can choose one entrée and you choose another and share.
As a suggestion for dessert, ask for the Pan Bon. This is a particular delight as it is a dark and sweet bread with candied fruit and absolutely amazing, satisfying and the perfect ending to your dinner.
Remember that Panama has an abundance of tropical fruits so this makes for a “Wow!” factor when it comes to drinks here in Colon. Prepared with water they are called Chica, and no, they don’t have to be drinks with alcohol or liquors. You will be hooked!
